Restaurants close constantly. Their walk-ins, ranges and ice machines sell at auction for pennies. Cleaned and delivered, they double or triple.

Cafes are closed Sundays. Rent the space cheap, run a single-concept pop-up (natural wine, matcha tasting, weekend brunch), split the take.
